Gluten free monster Cookies
Can we give a quick appreciation to whoever came up with the whole monster cookie idea?! Having almost 2 cookies in one is life changing haha. I can’t say that’s going to keep me from eating more but I’m sure going to feel a lot better saying I technically only ate one. Give me all the monster cookies please!
Now, for the cookies… I am no baking master and this recipe being EASY is right up my alley. All the ingredients are what you would normally have mixed in with your baking ingredients. The only thing I had to do a grocery story run for was the gluten-free oats, but I needed them anyway so it wasn’t a big deal. You can also use regular oats and it tastes the exact same. I have a wheat allergy so that’s why I go for GF. I love anything with oatmeal and chocolate and it’s a total bonus that Laken and the hubs love it too.
Number of cookies: around 3 dozen (all varies on how big your scoops are)
Cooking Temp: 350deg
Cooking time: 12 minutes (will continue to cook when cooling on pan for the 2 extra minutes it needs)
Ingredients:
3 eggs
1 1/4 cups brown sugar
1 cup sugar
3/4 tsp vanilla
3/4 tsp corn syrup
2 tsp baking soda
1/2 cup butter
1 1/2 cup peanut butter
4 1/2 cups GF rolled oats
1 cup chocolate ships
1 cup M&M’s
Instructions:
- add the eggs, brown sugar, sugar, vanilla, corn syrup, butter, and peanut butter in a bowl and mix well.
- add the baking powder and rolled oats and mix well.
- add the M&M’s and chocolate chips and mix.
- Use a larger spoon or ice cream scoop to lay dough on the pan
- Bake for 12 minutes at 350deg
- Let cool for two minutes for transferring to cooling rack.
