A day in the kitchen with a scrap never wasted✨

We are a heavy fruit and veggie family and I looove anything with zucchini and making use of what we have in our fridge.
Early September we went on a vacation and I accidentally purchased a few lbs of peaches and instead of letting them go to waste, we froze them with intentions to make peach jam when we got back. I’m also celiac and find it more affordable to make it myself over purchasing at the store and zucchini bread is one I knew I couldn’t mess up. Recipes below ✨

With every scrap being accounted for, I turn to my trusty @vego_composter. With the literal tap of a button I’m giving back to my garden with what I would typically just throw in the trash. It’s been a whole season using my @vego_garden Countertop Composter and the success in my garden is so thrilling!!

Peach Jam
•3-4lbs of peaches
•1 cup sugar
•juice of one lemon
~cook peaches down to desired smoothness, add sugar and set stove to medium high to get the peaches boiling. Once boiling add the lemon juice and bring it back to a boil and then turn heat down. If the jam isn’t to your thickness liking, bring back to a boil for a few minutes.

Zucchini Bread
•1¼ cup flour (I used gluten free)
•½ cup sugar
•1 tsp baking powder
•½ tsp baking soda
•¾ tsp cinnamon
•½ tsp salt
•2 cups shredded zucchini (medium sized zucchini)
•3 egg
•¼ cup melted coconut oil
•3 Tbsp honey
•1 tsp vanilla extract
~mix all wet ingredients together. in a separate bowl mix all dry ingredients and slowly add dry to wet. Preheat oven to 350. For bread pan cook for 55 minutes. For individual muffin pans cook for 24minutes
